Muffin

刚刚才向朋友取得wholemeal banana muffin的食谱,
就急不及待的把它烘好,
等孩子回来了,
可以享用afternoon tea。。。。

食谱是经过改良的,
用的香蕉多过面粉,而且用了很多fiber,
又少糖,
非常建康的食谱。
里头松松绵绵的,香蕉的香气
实在令人难以抗拒。。。。


Wholemeal Banana Muffin



Ingredient

175g cake flour(2part) +wholemeal flour(1part)
1tsp baking powder
1tsp bicarbonate
125g butter
60g or more brown sugar
1 egg
300g/4pcs banana(preferable pisang raja)
1/2cup milk
1/2cup toasted chopped walnut
1/2cup rolls oat

Method

Preheat  the oven to 180C.
Sift together flour, baking powder, bicarbonate.
Mash banana then pour in milk, stir the mixture until incorporated.
Cream together the butter and sugar until pale and fluffy,
gradually beat in the egg and the banana mixture.
Fold in the flour mixture, do not over fold.
Lastly fold in chopped walnut and rolls oat.
Spoon 1full tablespoon to paper cases and bake for about 20minutes
